The Grayson County Extension Office is bringing you an exciting new class series that will give you the opportunity to learn some new, “old fashioned” skills! Our “No Bones about It” series will focus on some of the classic methods that perhaps your grandmother used in order to save money in her kitchen, and to stretch her family’s food dollars as far as they would go; but more importantly, she knew that these methods were healthier for her family. This 3-part series will focus on the humble and versatile chicken, and will teach you simple steps to saving money, while gaining better nutrition in your meals by using fresher ingredients! Class instructor is Robin Felix, Grayson County Nutrition Education Program Assistant, and will be held at the Extension Office from 5:00 p.m. to 6:30 p.m. on the following schedule:
October 10th – Cutting up a Whole Chicken & Spatchcocking: Learn to cut up a chicken into the standard 8 pieces. Whole chickens are dollars less per pound compared to buying by the piece! Spatchcocking is a method that removes the backbone, from the tail to the neck, resulting in shorter cooking time and easier access to the interior for seasonings.
October 17th – Deboning Chicken Breasts & Thighs: If you love the convenience of boneless, skinless chicken breasts, or use boneless thighs on the grill or in Asian
stir-fries, then you know these special cuts of meat can be pricey. Learn easy methods to debone your favorite cuts to use now or freeze to use later.
October 24th – Homemade Stocks, Recipes & Preservation: Don’t throw away those leftover chicken parts – store them away in the freezer until you have enough to make a batch of stock or broth for a great base for soups or dumplings! Recipes for stocks and soups will be provided, as well as preservation methods!
This class series is free and class size is limited. Advanced registration is required by calling the Extension Office at (270) 259-3492 by October 3rd. You should park in the back of the building and enter in the West entrance door. You will be asked to bring a list of supplies if you want to participate in the optional hands-on instructional sessions, which will be provided to you at registration.
